Mix wholemeal flour (not good with quantities, maybe 6 mugs?) with 700 mls? buttermilk, 1 tsp salt, 1 tsp sugar, 1 tsp bread soda. It should be runny like porridge. Pour into oiled tin. Cook at 180. Test with skewer. If almost done, take out of tin and leave in oven with door slightly open and oven off. Forget about it until that evening, or the next day if you're like me.
I added porridge oats too as I've way too many and trying to use them up. You could add any seeds either.
I love it with butter and Bonne Maman raspberry jam which I've started buying in lots of 2 as I can't bear to run out.
I made apple pancakes for tea today with the rest of the buttermilk; 1 cup flour, 1 cup buttermilk, 1 egg, grate in one apple. Fry in butter. Eat with jam / honey.
That's all my brain can manage here, bare minimum of a blog post, sorry. Working on some meatier ones (one about me being a vegetarian too) I also take requests so don't be shy!
