Breakfast muffins

We had no bread in the house for breakfast the other day, a good thing, as we eat way too much of it anyway. It also forces me to think outside the box, and make pancakes/muffins for breakfast. Muffins it was then, as we were low on milk too. This made 18 muffins that were about 1.5 inches high.

(All amounts very rough)
Mug and a half of self-raising flour
Mug of gram flour (high in protein)
1.5 tsp mixed spice
3 tbsp molasses (you could use honey, golden syrup or sugar either)
2 large eggs
1.5in slice melted butter (about 120g?)
1 large Pink Lady apple, coarsely grated
About 1/2 mug milk

Mix all together, spoon into oiled muffin / fairy cake tins and cook at 180 C for about 15 mins or until skewer comes out clean.
I'll freeze the leftover ones and we'll eat them another time. The squashed ones will be made into a topping for banana and apple crumble (just invented it there) Must buy some cream. Yum.
