Chai Tea

I've one and a half sick kids here, and I've felt under the weather myself for the last few days. So I've been adding health-promoting spices to our food and drink in an attempt to arrest the bug if at all possible. Yesterday's dinner was a chilli full of veg, beans, cinnamon, chilli peppers etc.

So chai tea is fast becoming a favourite here, I make it decaf when I've used up my caffeine allowance (double espresso and one tea) and it tastes just as good (Lyons decaf teabags in a pink box). I've bought chai teabags in the past but find them very expensive especially as I have all the necessary ingredients in the cupboard. There are loads of chai recipes online, but I thought I'd share the one I'm making these days.

Clockwise from left: Sugar, black pepper, cloves, cinnamon, cardamom, tea bag. Frozen ginger slices in the middle. 

Put everything into a pot, after mashing up the pepper, cloves and cardamom with a wooden spoon. Add a large mug of water. Boil for 5 mins.

Then strain it...

And add milk to taste...

You could also add fennel seeds, and if all your spices are pre-ground it's all the same, honey would be lovely instead of sugar, or a piece of orange skin... The variations are endless.
