Rustic but delicious.
Sunday breakfasts are usually no different to other-day breakfasts as I'm home every day with the time if I feel like it. It is nice but there's not much sense of occasion.
So today I wanted to put a bit more effort into the breakfast. In our blender I whizzed up a pancake batter of:
1 cup milk
1 cup wholemeal flour
1 cup oats
A handful of dessicated coconut
A little water
I heated up the frying pan and fried the pancakes in butter, as well as stewing 3 eating apples in honey, cinnamon and a little butter.
I ate mine with natural yoghurt and a knife and fork. The boys ate the pancakes with strawberry jam. Who am I kidding, they tasted the pancakes but they were too wholesome and not chocolatey enough for them. One boy added sugar, the other disappeared to attack a bowl of apples. And now has a tummyache.
The leftover apples have been stored in the fridge like this:
Later they'll have yoghurt and honey and nuts/seeds added for a snack or dessert. Or tomorrow I'll throw them into a smoothie with almond milk, banana, honey and cinnamon. The leftover pancakes are covered in the fridge and I'll probably have one with melted cheese and spinach for lunch. Yes even though it has banana in it, cuz I'm crazy like that.
