One of my biggest thrills this summer has been free lunches, from my garden. I've made this salad about three times in the last few weeks, and the amount of love and care gone into the produce makes it taste so good.

I use lettuce from the plants at the front of the growbag, grown from seed.
I add grated courgette/zucchini from plants gifted by a neighbour which have done really well.
I chop in lemon balm leaves from the plant on the left which is thriving as you can see!
Then I add parsley from the pot at the top right, and mustard leaves grown from mustard seed bought in an asian supermarket (bottom left and right).
The mustard on the right is a few weeks older and has shot up bigger leaves and small flower buds. I may transplant this and see can I get my own seeds from it. I'm working sloooowly towards self-sufficiency at least where herbs are concerned.
Then I add olive oil, apple cider vinegar, pink himalayan salt and pepper to taste, and my lunch is done!
